Uncork South African Wines at Milton’s Spring & Vine Wine Dinner on March 23


Milton’s Cuisine & Cocktails commemorates the arrival of spring with its fourth annual Spring & Vine wine dinner, taking place on Thursday, March 23 at 7:30 p.m. This year’s dinner showcases unique South African wines from the country’s celebrated Boschendal and Bellingham wineries.

The four-course menu from executive chef Derek Dollar complements the light, fun feel of spring and pairs perfectly with the South African flavors of the wines. Price is $90 per person plus tax (gratuity included). Tickets may be purchased at springandvine.eventbrite.com.

First Course
Scallop Crudu Au Natural: citrus, olive oil, sliced radish, baby fennel, masago roe, micro sorrel and wasabi, shishito pepper paired with sparkling wine

Second Course
Wood-Grilled Leg of Rabbit: white wine braise, warm quinoa with sweet peas and grilled corn, curried lime gremolata, annatto seed oil, carrot top-cilantro oil paired with a lightly oaked Chenin Blanc

Third Course
Porcini Crusted Veal Striploin: heirloom carrot, leek, purple fingerling potato and Loudmouth Farms mushroom ragout paired with a fun take on Pinotage, the signature varietal of South Africa

Fourth Course
Dark Chocolate Layered Mousse Cake: raspberry cake, white chocolate cherry mousse, blackberry cake, pomegranate reduction, honeycomb candy paired with a South African Rhône-style blend

Who’s the keeper of the secret cake recipe in your household? Carrot cake has graced the menu at Milton’s Cuisine & Cocktails for 10 years, and it’s gluten free. Becoming nostalgic about carrot cake sends executive chef Derek Dollar back in time to reminiscing Sundays spent baking with his mother. Dollar’s interpretation swaps chickpea and rice flours for wheat flour and adds pineapple for luscious flavor and moistness. Share the recipe? Not happening. Cheer up, carrot cake crowd. There’s plenty to go around at Milton’s and the cake’s always a hit at Milton’s private events such as weddings, showers and birthday parties.

Executive Chef Derek Dollar Offers Dinner Specials Monday-Wednesday

Weekday Specials

Guests who visit Milton’s early in the week are in for a treat as executive chef Derek Dollar launches new Monday through Wednesday dinner specials starting Feb. 20. Fans of Dollar’s contemporary Southern cuisine know the chef is always creating fresh, new dishes with the season’s bounty. There isn’t enough room on the menu for all of the fan favorites, but now, patrons can enjoy several of them as featured specials.

Monday: half rack of baby back ribs, Coca-Cola baked beans, bacon braised collard greens, GA red barbecue sauce ($20)

Tuesday: applewood smoked chicken (half a bird), sweet and spicy cucumber-melon salad, stewed tomato kale, mango-peach chutney ($18)

Wednesday: grouper fish fry, cracked mustard coleslaw, blue cheese sweet potato tots, comeback sauce ($19)

Pair the dinner specials with Milton’s featured smoked praline old fashioned ($10), made with house-infused smoked pecan bourbon, caramel syrup and black walnut bitters and served on a king ice cube.
